I still think it's because the Grunt Cryssalid ( The ones we see in battle) are being controlled by Leader Cryssalid (I imagine these are hold up in the main base) via Psychic powers akin to Mind Meld. That's what makes them almost impossible to MC or Panic because you can't MC a Mind Melded...

I just read Atka's post and I found it strange that her psionics worked on the cryssalid. But it was probably because it was a hologram created by X-Com. We have yet to experience the Cryssalid's Near-Immunity to psionics, so the simulator wouldn't have that information.
